Toasty Egg Snacks

Toasty egg snacks are a really healthy snack recipe to use with sliced hard boiled eggs and a toasted English muffin, or just toast. I always keep a few hard boiled eggs on hand, because they're great for snacking and with a quick meal. But instead of just eating them plain, try this for a change.

Boil a few eggs as usual. Then slice them. (I have one of those very handy egg slicing gadgets). Then put the extras that you aren't using at the time, in a plastic container for the fridge to use later.

Toast a whole grain (much better for us) English muffin. You can then spread it with whatever condiment you like, such as butter or margarine, or mustard, ketchup, mayo, even a little cottage cheese.

Next you can put on a couple pieces of low-sodium bacon or turkey bacon, or bacon crumbles. If you can eat some salt and pork, thinly sliced ham is also really good. I've also used a thin slice of salami. I happen to be able to get venison salami and it is outstanding.

Then take out 3 or 4 slices of egg. Dust them with seasoning. Good ones to try are Spike, regular salt and pepper, Mrs. Dash's (salt substitute), cayenne pepper, paprika, or your favorite herbs. Or several of these. Fresh herbs are also delicious. I've used fresh dill, cilantro, and basil. Put the egg slices on top of the bacon or other meat, which is on top of your toasted English muffin.

Lastly, you can add a slice of tomato, green pepper, a thin slice of onion, and/ or mushrooms. And perhaps a few sprinkles of grated cheese. Then just put it all into the microwave or toaster oven for a few seconds just to heat it all up (although heating is not necessary; the toast will already be done). If you microwave I suggest you start at about 20 seconds and see how it's going. It will depend on your microwave.

These are very tasty and easy to make, and would even be easy for elderly people to put together as well. Our family really enjoys them.
