So Simple Banana Cake Recipe


Our So Simple Banana Cake recipe is exactly that – simple. But it’s also natural and high in nutrition. Who says desserts can’t be good for you, and delicious! We’re also including a great family cream cheese frosting, and Mom’s broiled coconut frosting recipe – see below.

Bananas are very high in nutrition. Most folks are familiar with their high potassium content. They’re low in sodium, cholesterol, and fat. But their also high in Vitamins C and B6, plus the minerals magnesium and manganese, among many others. And plenty of fiber too. With the other natural ingredients that we include, this is a really healthy dessert. And you can also eat it for breakfast – like coffee cake.

Here’s the recipe, then see below for two great frostings!


So Simple Banana Cake

Mix dry ingredients together:
2 1/8 cups whole wheat pastry flour
7/8 Tablespoon baking powder
1/3 teaspoon baking soda

Cream together first, then add to dry ingredients:
1/3 cup honey or pure maple syrup
3 eggs
1 1/4 cups mashed banana
1/3 cup butter or margarine
1/3 cup oil
1/2 teaspoon vanilla
1 cup chopped nuts (optional)

Make sure ingredients are mixed thoroughly. Put into a greased and floured 8x8 cake pan. Bake at 350 F degrees for 20 to 40 minutes, until done.


Fabulous Frostings

This simple banana cake recipe is really delicious plain or even spread with a little butter, and un-frosted. But if you just must … here are two fabulous frostings that you can use on your simple banana cake recipe.

Family Recipe for Cream Cheese Frosting

Soften 1/2 cup butter (1/2 stick)
8 oz. cream cheese
2 1/2 teaspoons vanilla2 cups powdered sugar

Blend the butter and cream cheese together. Then add the vanilla and powdered sugar. Mix in well. Spread over a cooled cake. Keep frosting refrigerated if you are not eating it right away.

Mom’s Broiled Coconut Frosting

1 cup of coconut
1/4 cup softened butter
1/2 cup packed brown sugar
3 Tablespoons cream
Mix together well the softened butter and other ingredients. Spread over the cake – it does not need to be cooled, as you will be returning it to the oven to broil the frosting. Place the frosted cake (in pan) about 3 inches from the broiler. Broil until the frosting becomes brown, about 4 or 5 minutes. This will cover approximately an 8x8 inch cake.
