Ice Cream Sandwich

Try a really easy way to make a very versatile ice cream sandwich - as homemade as you want to get it. You can either make the ice cream yourself (like I do), or fix up what you already have in your freezer. Here's how.

If you already make your own homemade ice cream, you'll have your favorite recipe so I won't go into that here. Otherwise, here are some fun ways to use the ice cream you have around. I like to use the Breyer's No Sugar Added kind, if I use commercial ice cream. That's because I have to watch blood sugar levels and it is made with Splenda.

What To Use
Ice cream of your choice
Additions, such as chopped fruit, nuts, chocolate chips
Graham crackers - (I like the natural New Morning organic grahams made with honey)
Sliced bananas (optional)
Peanut butter (optional)
Square of chocolate (optional)

First, soften the ice cream enough so it is mixable.
Then add in anything you want to, to liven it up.
You could add in chopped fruit, nuts, chocolate chips, even some jam.

Then when I re-freeze it, first I put it in a pyrex mini loaf pan. It helps to very lightly spray it with pan spray first. You can probably also use a rectangular plastic container. The point is to get it into a container that makes a more rectangle shape. Smoothen out the ice cream, cover, and put it back into the freezer.

When it's frozen, you're ready to make the ice cream sandwiches. Obviously you wait until you're ready to serve your dessert before you put these together.

Just slice out a rectangle of the ice cream with a sharp knife. Lift it out and onto the graham cracker. Then lay on to of that what ever else you want, like banana slices, even some peanut butter (delicious actually!), and a square of chocolate. I've even sprinkled on a little granola as well! I'm sure there are all kinds of things you can think of to add in. Then cover it with another graham cracker, and it's ready to eat.
