For-Sure Healthy Carrot Cake



Let’s face it, some healthy carrot cakes are just wannabe healthy. You find them everywhere. But this one really is, for sure. And really delicious. Plus, almost a no-brainer. This healthy dessert recipe really does give you some real nutrition. It’s got fresh carrots, plus whole wheat pastry flour, plus nuts, not to mention honey. Raw honey, by the way, is very high in minerals – instead of having had them processed out. Carrots, as you may know, are high in Vitamin A (good for eyes, which is good for elderly nutrition), Vitamin C and fiber. They’re low in fats and are a good source for many minerals, including Thiamin, Niacin, and Potassium. Being naturally sweet (have you ever tried fresh carrot juice??), they are really good in a healthy dessert recipe.

This healthy carrot cake can be made the really easy way – just one layer in a standard 8x8 inch cake pan, or make two round cakes for a two-layer effect. In this case, you’d want to use frosting, including between the layers. We have a yummy Cream Cheese Frosting recipe below. with a surprise garnishment.


Healthy Carrot Cake Recipe

1/2 teaspoon cinnamon
1/2 tsp mace
3/8 cup oil
5/8 cup honey
2 eggs, beaten
3/4 cup grated fresh carrots
1 1/2 tsp baking powder
1 cup whole wheat pastry flour
1/4 cup hot water
1/3 cup chopped nuts
1/3 cup raisins (optional)

Blend oil, spices, and honey. Add in eggs and carrots (you can get carrots pre-shredded in the grocery store, if you hate to shred). Of course, organic is always best. Or home-grown! Add flour and water. Beat well. Add nuts and raisins if you are using them, and blend in well. Bake in greased and floured cake pan at 350 F degrees, for about 35 minutes or until toothpick comes out clean. This works well as muffins too! You can use this carrot cake plain, or top with whipped cream, ice cream (or Rice Dream), or your favorite frosting. See our Cream Cheese Frosting below to go with this healthy carrot cake. Cream Cheese Frosting

Well, okay, maybe the frosting is not quiteas healthy, because it does have powdered sugar. I’m sure, though, you could use a sugar substitute and it would still be really good. If you or a loved one has elderly issues with dietary restrictions and can’t eat much sugar, you don’t have to frost our healthy cake recipe. It’s really good just plain! But we’re including the frosting anyway.

You will need:
1/2 cup butter (1/2 stick) softened
8 oz. cream cheese
2 cups powdered sugar
2 1/2 teaspoons vanilla

Blend the butter and cream cheese together. Add in the powdered sugar and vanilla, blending in well. Best to keep refrigerated if not eaten right away.


Surprise Carmelized Carrot Garnishment

Here's another very yummy addition to top off our healthy carrot cake recipe.

You will need:
1/2 cup grated carrots
1 Tablespoon of butter or margarine
1 Tablespoon brown sugar
½ teaspoon cinnamon

In a pan, melt and heat the butter and brown sugar, stirring frequently. Sprinkle in and stir the cinnamon. Sprinkle the carrots into the mixture, stirring well to coat them. Cook until tender and slightly browned. Cool, and then add on top of the frosting. Also – if you want to, you can add in pecan halves and carmelize them as well. If so, you may need to increase the amount of butter and brown sugar. Another good variation is adding in a little grated coconut instead of pecans.
