English Muffin Recipes

by Mara
(Pennsylvania)

English muffins recipes make an easy (and creative) way to do breakfast or snacks, so here are several unusual favorites. And you can add your favorite stuff to them too.

When I make these I slice the English muffin, put it all together and then stick them in my counter-top toaster oven. I bake them at about 250F degrees for about 10 minutes. If you don't have one of those, then just toast the English muffin as usual. Warm up the other ingredients in the microwave separately and then assemble. Or else after it's toasted, put the other ingredients onto the English muffin and then microwave just for a few seconds, long enough to warm up everything else.

Ham and Pineapple

Either make this all together and heat in the toaster oven, or warm ingredients separately and then put together, as follows:
While you're toasting the English muffin, heat up one or two slices of ham (or turkey is good) and a slice of pineapple in the microwave. If you want cheese, put one slice on top of the piece of meat so it melts a little. Microwave just long enough to warm them; maybe 20 to 30 seconds, depending on yours. Then lightly butter the muffin, adding the ham and pineapple (and cheese if using) on top. This makes a really great flavored treat!

English Mexican Muffin

Prepare as explained above.
The ingredients that you put on the English muffin are:
Spread on a little salsa.
Some shredded Mexican style cheese (or whatever kind you like).
A few fresh spinach leaves on top.
I've also put a bit of mild jalapeno on top as well.
Again, either warm it all together in the toaster oven, or toast and warm ingredients separately.

Jam and Cream Cheese Deluxe

Prepare as explained above.
Here are the ingredients to put on the muffin for this one:
Spread with a layer of jam (I like the all-fruit kind).
Add a layer of your favorite cream cheese.
Then sprinkle with a few dark chocolate chips!
(You can melt them in the microwave for a few seconds if you want to).

Italian English Muffin

If you have some pasta sauce or tomato sauce left over (or can get a little), this is really good. Prepare as above.
Spread a layer of pasta sauce over the muffin.
Add on slices of either pepperoni or salami.
Add a layer of shredded cheese.
Top with some sliced black or green olives, if available.
