Curried Chicken Salad

Here's a really healthy snack. I made this up after trying something similar in a restaurant. I love curry, but this can be done very mild.

Chopped COOKED chicken (whatever you have left over!)
Chopped celery...small pieces
grapes, cut in half.
(Make as little or as much as you want.)

Add Mayo or Miracle Whip. I don't like mine "sloppy" so I just add a little to keep it holding together.
Shake on some curry powder, to taste.
Mix it all up.

Place on top of lettuce on a plate or salad bowl. You could even use it as a dip.

It is really tasty, and you have crunch from the celery.
Fun to eat. Also will make a good snack for elderly. And since it's mild it would be easy on their stomach too.

Pickled Cucumber Recipe

This pickled cucumber recipe has been in my family for years, and we have been told it is delicious. It does contain salt, however, so if any elderly family or friends are on a salt restricted diet, this may not be suitable for them.

Cut a large cucumber into thin slices.
Soak the slices in a bowl with 1/4 cup of salt and enough water to cover them, for 6 to 8 hours.
Remove the salt water.
Add 1 cup of vinegar (natural vinegar is good).
Add 1 cup of sugar.
Sprinkle in a little dill to taste.
You can also sprinkle on a little pepper. I like fresh ground.

I make this right in a container bowl that has its own cover. That way I can just put it right into the fridge. These are very good to serve at parties or for appetizers. I remember my parents eating them with herring and crackers, and their evening martini!

No-Mayo Waldorf Salad Recipe

If you're like me, you might hate anything with mayo or other similar dressing. This little salad is refreshing and healthy since it’s made with fruit and nuts. Very easy to make too. I tend to go easy on the "dressing" here myself (whipped cream in this case). So you can put it in a little at a time till you get it the way you like. This recipe does not contain mayo or Miracle Whip, so is perfect for people who don’t like those.

It's really good to keep in a container and grab for a little snack.

2 cups of diced apples (I like Granny Smith)
2 Tablespoons of lemon juice -- or less, if you want less sour taste.
1 cup of thinly sliced celery
1/2 cup walnut pieces
1/2 cup dates or raisins
1/2 cup whipped cream -- add in a little at a time until you get it to the consistency that you like.

Toss everything together first, then add the whipped cream last. This makes about 4 servings. But if you’re a light eater, it will give you more.

Surprise Broccoli Salad

Here’s a great recipe for a broccoli salad, with some surprising and tasty ingredients. This can be used for a healthy snack too, not just for a salad. I like to eat different kinds of salads during the day for snacks sometimes. Make this the day before, if possible, because the taste gets better.

1 head of broccoli
1/2 red onion, chopped into small pieces
1/4 pound of crispy bacon, broken up small
1 can of mandarin oranges
1/4 cup pecan pieces
1/4 cup raisins

Dressing:

1/4 cup of white vinegar (apple cider vinegar gives a nice taste too)
1 cup of sugar, Splenda, etc.
1 cup mayo

Break broccoli into little pieces into a bowl or container. Add in the other ingredients. Then add in dressing, and mix well. Cover bowl or container and refrigerate until ready to serve.
