Spicy Easy Pumpkin Pie
Our spicy easy pumpkin pie recipe is perfect anytime, not just for the holidays. It is natural and nutritious, and we have 2 different variations. The second is a more traditional version in which you can use either sugar, or your sweetener of choice. Either makes a very healthy dessert recipe. Try these any time of year! And remember, pumpkin is from the squash family, so is very high in nutrients. If you can obtain fresh (mashed) pumpkin, all the better! Pumpkin nutrition includes potassiumn, Vitamins A and E, Vitamin C, iron, calcium, and many other vitamins and minerals. In fact, one cup of pumpkin gives you 245% of your Daily Value of Vitamin A. It’s also very low in saturated fat, cholesterol, and sodium. You can also try these recipes with mashed sweet potato – ever heard of sweet potato pie?
Natural Pumpkin Pie (with maple syrup) 1 1/2 cups pumpkin puree 1/2 cup honey or maple syrup 1/8 teaspoon powdered cloves 1 1/2 tsp cinnamon 3/4 tsp ginger 1/2 tsp salt 2 eggs, slightly beaten 1/2 can evaporated milk (or 1 cup scalded milk) Mix in order given. Pour into a pie crust. Bake 10 minutes at 450 F degrees; then 40 minutes at 350 F degrees. Serve this healthy dessert with ice cream or whipped cream.
Pumpkin Pie (with sugar or sweetener) 3 eggs 1/2 to 3/4 cups sugar (white or brown) or granular sweetener; or a combination of white and brown – very yummy! 1/2 teaspoon salt 1 tsp cinnamon 1/4 tsp clove 1/4 tsp nutmeg 1/4 tsp ginger 1 can pumpkin 1 cup (8 oz.) evaporated milk Beat all ingredients together well. Pour into a single pie shell. Bake at 450 F degress for 10 minutes. Then at 350 F degrees for 40 to 45 minutes.
