Raved About Easy Pecan Pie

This easy pecan pie is a recipe from my mother, now deceased, and has been in the family for over half a century. People always rave about it and say it’s the best they’ve ever had. And it’s my favorite dessert! Nice and firm, not gelatinous. It’s really easy too. You can actually call it a no-brainer. Only takes about 10 to 15 minutes to put together, then bake. You can make your own pie shell if you want to, or get one ready-made from the store. (I get one from the health food store, or natural food section).

A study came out in 2006 by Nutrition Research that stated just a handful of pecans per day can help lower coronary heart disease, due to its high levels of antioxidants (one of the highest, in the nut food group), especially Vitamin E. Pecans also contain plant sterols, which help lower bad cholesterol, one of the common elderly issues with health. Pecans contain natural, good oils, as do many nuts. They’re best eaten unsalted, for optimal health. And they’re also high in many other vitamins and minerals. So this easy pecan pie is truly nutritious and excellent for elderly nutrition.

This healthy dessert recipe can be used in a traditional pie crust, or in those little mini party pie crusts cups. So it’s great for parties and receptions too. It will be a hit!

You will need:
1 deep pie shell, unbaked
3 eggs
1/4 tsp salt
1 cup pure maple syrup
1/3 melted butter
2 teaspoons molasses

(Beat the above ingredients thoroughly, until mixed well).
Then add in and stir well:
1 to 1 1/2 cup pecans

Preheat oven to 350 F degrees. Put the pie shell (in its pie pan) onto a drip pan or cookie sheet as a protection, so the pie mixture will not dribble onto your oven rack and burn while baking. Pour the above mixture into the pie shell. The mixture will be soupy and can spill -- carefully put into the oven. Bake about 50 minutes or until a knife comes out clean.

Excellent any time of the year (not just holidays). Surprise your family and friends - if they like pecan pie, they will love this!
