Zesty Almond Apricot Bread or Cake

This natural apricot bread recipe with almonds is both tangy and sweet, with very healthy ingredients. It’s made with both fresh apricots, which makes it very moist; and dried, which adds a little zest! (You can also use either/or instead of both).

The theme of our recipes is “healthy,” and this one is no exception. Apricots are very high in Vitamin A and C, Potassium, lots of other vitamins and minerals, and provide lots of fiber. As with other fruits, they’re low in sodium, and fats, and low in calories.

When you mix this with almonds, a high-protein nut with lots of calcium and manganese for bones, Vitamin E and phytochemicals that can protect against cancer and heart disease, and “good” fats with no cholesterol -- you get a great combination. Both apricots and almonds are excellent for elderly nutrition. In this recipe we use a more natural sweetener, raw honey or pure maple syrup, which also adds a wonderful flavor. Zesty Almond Apricot Bread

1 1/2 cup dried apricots
1 1/2 cups water
2 Tablespoons soft butter or margarine
1/2 cup honey (raw is best) or pure maple syrup
1 teaspoon salt
1 beaten egg
1 tsp vanilla 1 1/2 cups whole wheat pastry flour
1 tsp baking soda
2 tsp baking powder

1 cup chopped or slices almonds
1/2 cup fresh chopped apricots
1/2 tsp grated orange rind

Cook the dried apricots in the water for 7 to 10 minutes (covered, on low heat) until soft. Cool completely. Add in butter, syrup or honey, and salt. Beat in egg and vanilla. Sift together the dry ingredients into a bowl. Then fold into the other liquid ingredients. Lastly, add the almonds, chopped fresh apricots, and orange rind. Put mixture into a greased & floured loaf pan. Bake at 350 F degrees for about 1 1/2 hours. Cool for 10 minutes. Then remove from pan.

This tasty almond apricot bread can be served at breakfast, brunch, or a coffee break. It’s perfect with a little butter or natural all-fruit apricot jam. Even whipped cream or ice cream!
